In 2005 toe ons by stirling castle in skotland was het ek 2 resepte boekies
van johanna mathie gekoop. In haar scottish teatime recipes het ek ‘n resep gekry
vir honey and whisky cake en ek het ‘n baie ou resep van heuningkoek
ek het die 2 resepte so bietjie aan gepas en met die volgende resep die koek gebak.
Ingredients
125 g Stork margarine
250 ml brown sugar
3 eggs
60 ml whisky
360 ml self raising flour
grated rind of 1 lemon
Grease 1 x 23 cm cake tin
Cream margarine and sugar
Add lemon rind
Beat in the eggs one at a time, until pale and fluffy
Sift half the flour and fold into mixture
Add whisky and fold in remaining flour
Bake for30 minutes at 180 c
Sauce
30 g margarine or butter
60 ml honey
15 ml lemon juice
Melt together and pour over cake as soon as the cake comes out of the oven.
Icing
60 g margarine or butter
240 ml icing sugar
15 ml honey
15 ml lemon juice
Mix until ingredientsare combined.
Smooth over top of cake and decorate as desired.
